I told Cole I would make him some Do-Si-Dos when I was plotting my BIY Samoas extravaganza since he is not a fan of coconut. It turns out he liked the Samoas anyway, but another batch of cookies didn't hurt anyone!
I didn't take step-by-step photos of these ones, but the end product turned out quite tasty and they actually paired nicely as the more tame cookie compared to the IN YOUR FACE sweet Samoas.
I used a great recipe that I found through Saveur from the blog Baking Bites. Aren't the warm, cozy colors of UJ's kitchen so "Do-Si-Do" friendly?
